Here‘s a flavorful recipe for a Vegan Mediterranean Hummus Sandwich:

 

Ingredients:

  • Bread: 2 slices of whole-grain or sourdough bread (or pita bread)
  • Spread: 2-3 tbsp hummus (classic or flavored)
  • Vegetables:
  • 1/4 avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 1 small tomato, sliced
  • 1/4 red onion, thinly sliced
  • Handful of baby spinach or arugula

  Extras:

  • 4-5 Kalamata olives, sliced
  • 1 tbsp sun-dried tomatoes, chopped
  • 1 tea spoon of smoked paprika
  • Pinch of salt and pepper
  • Sprinkle of dried oregano

 

Instructions:

1. Toast the Bread (optional): Lightly toast the bread slices if you prefer a bit of crunch.

2. Spread the Hummus: Generously spread hummus on both slices of bread.

3. Layer the Vegetables:

Start with spinach or arugula on one slice.

Add the cucumber, tomato, avocado, red onion, olives, and sun-dried tomatoes.

4. Season: Sprinkle with salt, pepper, and oregano or  for extra flavor.

5. Assemble: Place the second slice of bread on top and press gently.

6. Serve: Cut the sandwich in half and enjoy with a side of fruit, salad, or vegan chips.

 

This sandwich is easy to make, packed with Mediterranean flavors, and perfect for a quick meal!
