Ingredients:

 

For the Chicken:

  • 4 boneless, skinless chicken thighs (or breasts, if you prefer)
  • 1 tablespoon vegetable oil (for cooking)

 

For the Teriyaki Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar (or honey, if you prefer)1 tablespoon rice vinegar
  • 1 tablespoon mirin (optional, but it adds authentic flavor)
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)
  • 1 teaspoon sesame oil (optional, for extra flavor)

 

For Serving:

  • Steamed white rice or jasmine rice
  • Sliced green onions (for garnish)
  • Sesame seeds (optional, for garnish)
  • Steamed vegetables (broccoli, carrots, or snap peas are great options)

 

Instructions:

1. Make the Teriyaki Sauce:

  • In a small saucepan, combine the soy sauce, brown sugar, rice vinegar, mirin, garlic, and ginger.
  • Bring it to a simmer over medium heat, stirring occasionally to dissolve the sugar.
  • Once it starts to simmer, mix the cornstarch and water in a small bowl, then slowly whisk it into the sauce. This will help thicken it. Let it simmer for another 2-3 minutes until it reaches a syrupy consistency.
  • Stir in the sesame oil (if using) for an extra layer of flavor. Set the sauce aside.

 

2. Cook the Chicken:

  • Heat the vegetable oil in a large skillet or frying pan over medium-high heat.
  • Season the chicken with salt and pepper (optional).
  • Add the chicken thighs to the pan and cook for about 5-6 minutes on each side, or until fully cooked (internal temperature should reach 165°F (75°C).
  • Once the chicken is cooked through, remove it from the pan and let it rest for a few minutes before slicing it into strips or bite-sized pieces.

 

3. Glaze the Chicken:

  • Lower the heat to medium. Pour the teriyaki sauce into the same pan you cooked the chicken in, and let it cook for 1-2 minutes, allowing it to thicken further and develop flavor.
  • Add the sliced chicken back to the pan and toss it in the sauce to coat it evenly.

 

4. Serve:

  • Serve the glazed chicken over a bed of steamed rice. Garnish with sliced green onions and sesame seeds. You can also add steamed vegetables on the side for a complete meal.

Tips:

  • For extra crispy chicken, you can pan-fry the chicken without covering it, or even finish it in the oven if you‘re using chicken breasts.
  • If you prefer the sauce to be more intense, let it reduce a little longer.
