Wraps are one of my go-to meals when I want something quick, satisfying, and packed with flavor. This fried tofu wrap hits all the right notes-crispy tofu, savory mushrooms and onions, fresh spinach, creamy mashed avocado, and plant-based mayo, all wrapped up in a soft tortilla. It’s the perfect balance of textures and flavors, and best of all, it’s entirely plant-based! Whether you’re looking for a hearty lunch or an easy dinner, this wrap will leave you craving another bite.
1 block firm tofu (pressed and cut into strips)
1/4 cup flour
1/4 cup breadcrumbs
1/4 tsp pink salt
1/4 tsp black pepper
1/2 tsp onion powder
1/2 tsp garlic powder
Olive oil for frying
1 cup mushrooms (sliced)
1 medium onion (sliced)
1 medium tomato (sliced)
1 cup fresh spinach
1 avocado (mashed)
2 tbsp plant-based mayo
4 large tortillas or wraps
1. Prepare the tofu:
In a shallow dish, mix together the flour, breadcrumbs, pink salt, black pepper, onion powder, and garlic powder.
Dredge the tofu strips in the mixture, ensuring each piece is evenly coated.
2. Fry the tofu:
Heat a generous amount of olive oil in a skillet over medium heat.
Fry the tofu strips until golden brown and crispy on all sides, about 3-4 minutes per side. Remove and place on a paper towel to drain excess oil.
3. Cook the mushrooms and onions:
In the same skillet, add a bit more olive oil if needed. Sauté the mushrooms and onions over medium heat until caramelized and tender, about 7-10 minutes.
4. Assemble the wrap:
Spread 1-2 tablespoons of mashed avocado onto each tortilla. Add a layer of fresh spinach, followed by the fried tofu strips, sautéed mushrooms and onions, and sliced tomato. Drizzle with plant-based mayo.
5. Wrap it up:
Fold in the sides of the tortilla, then roll it tightly into a wrap.
Serve immediately or lightly toast the wrap in the skillet for extra crispiness. Toss some olive oil and sea salt chips on the side.
Make it spicier: Add a drizzle of hot sauce or sprinkle in chili flakes for some heat.
Gluten-free option: Use gluten-free tortillas and substitute the flour and breadcrumbs with gluten-free alternatives.
Storage: Store leftover fried tofu in an airtight container in the fridge for up to 2 days. Reheat in the oven or air fryer to maintain crispiness.
