Roasted Beet Salad w/ Vinaigrette dressing

Here is a Roasted Beet Salad recipe that is fresh, vibrant, and full of flavor.
Ingredients:
For the Salad:
4 medium beets (red, golden, or a mix)
2 tbsp olive oil
¼ tsp salt
¼ tsp black pepper
4 cups mixed greens (arugula, spinach, or spring mix)
½ cup crumbled goat cheese (or feta)
¼ cup chopped walnuts (or pecans, toasted)
¼ cup thinly sliced red onion
½ an apple or pear, thinly sliced or thinly sliced mandarin oranges
For the Dressing:
3 tbsp olive oil
1 tbsp balsamic vinegar (or red wine vinegar)
1 tsp honey or maple syrup
1 tsp Dijon mustard
¼ tsp salt
¼ tsp black pepper
Instructions:
1. Roast the Beets:
Preheat oven to 400°F (200°C).
Scrub the beets, trim the tops, and wrap each in foil. Drizzle with a little olive oil before sealing.
Roast for 45 to 60 minutes until fork-tender. Let cool, then peel and cut into wedges or slices.
2. Prepare the Dressing:
In a small jar or bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
3. Assemble the Salad:
Toss the mixed greens with a little dressing.
Arrange roasted beets, goat cheese, walnuts, red onion, and apple/pear slices over the greens.
Drizzle with more dressing and serve immediately.
Optional Add-Ins:
Avocado slices for creaminess
Quinoa for extra protein
Orange segments for a citrus twist
